I could not grab the bowl without 2 hot pad silicon thingies. I don't think a few ice cubes would help. I think I need to just Cook the soup, add bread and cheese then toast until it melts and not a second longer

I think a kitchen torch would be faster and brown the cheese better. The oven seems to have heated the bowl more than you anticipated.
