For some reason I never think of baking carrots, even when I'm just doing a veggie roast. Radishes, turnips, beets, brussels, cabbage, asparagus and broccoli are my goto baking veggies. Carrots go into almost every soup I make though

My eldest loves them so I make them as much as possible. I'll eat anything veggie wise once baked. Turnip sounds like a good next. I miss me some well done turnip.

Turnip goes great with a roast and is a shockingly good addition to a veggie soup

reminds me of the time I discovered celery for stew... or even carrots for sauce because they lower the acidity... eesh cooking is a loving ordeal
