We've been eating smaller portions as of late. I enjoyed only a bunch of baked carrot with this. Root veggies go well with beef so there. Super simple but very enjoyable.
For some reason I never think of baking carrots, even when I'm just doing a veggie roast. Radishes, turnips, beets, brussels, cabbage, asparagus and broccoli are my goto baking veggies. Carrots go into almost every soup I make though
My eldest loves them so I make them as much as possible. I'll eat anything veggie wise once baked. Turnip sounds like a good next. I miss me some well done turnip.

marinate because it has very little flavour on it's own, cook at 425 for 35-50 mins or until internal temp of 135 at the thickest
once finished cover in foil for 10 minutes (it heats up 10-15 degrees
