I tried this yesterday. I would recommend. However, since I caught my stove on fire, I had to bake them instead of frying them. Still good, but I didn't get a time for that--I heated to 165F.

I have some coconut flour I could sub instead of almond flour

Absolutely. I haven't used it myself, though. Almond flour is kind of... moist? It's almost sweet in flavor. That makes it real good. I assume coconut flour would be pretty similar?

Side note: If you use almond flour, i check it real good. I ended up finding some shells in mine. That wouldn't have been a nice surprise.

I can’t eat almonds so I was poking around the net looking at substitutes. Turns out coconut flour and tapioca flour in a 1:1 is a good replacement. If you use coconut they say you need to add moisture or the texture may suck. Never used it in frying, have you? How’d it go?

Nah I have not fried anything in a long time. Might try. I have only used it to make "pizza crust" and didn't care for it. Still think the coconut flour can do well I just don't bake a lot on keto.

I make some great keto chicken tenders using crushed pork rinds as the breading.

I've heard of doing that, haven't tried yet. I have some here I just haven't gotten to it. Chicken isn't my favorite meat, I just put up with it because it's my wife's favorite.
