Google still keeps a list of everything you ever bought using Gmail, even if you delete all your emails

Same with anything you ever post or add to your profile on facebook. Advertisers will never delete data you voluntarily gave them. That would be akin to setting a pile of cash on fire.

Legitimately it is. Google now has your entire Amazon order history if you use gmail for your Amazon account, and they specifically use that Amazon order history to sell to advertisers.
