2L of peanut oil in a large cast iron Dutch oven on the stove top. If you time the pot at a certain temperature setting (electric stove) it has a good gentle frying temperature.

Made buttermilk fried chicken that night too.

I'll definitely have to give this a try. Makes perfect sense. I'm not sure why I never considered using a dutch oven for frying before. Tall enough to avoid splatter w/ even fairly even heat distribution.

Its good, I need a frying thermometer to get the best results but there are so many different kitchen gadgets you can get.
