What sort of organization work did it require?
I didn't organise, I just participated but observing, someone had to take delivery of all the stuff and then a working party (or themselves) split it up. May emails back ad forth to order ad adjust orders/organise working party, dealing with the money side of it, trying to get people to pay. It all adds up to someone's time.

I've been part of a food co-op and it was interesting but it required a lot of organisation work and I often overspent on the food budget because of it.
