It's heavier, it has more flavor, and it has a better texture. Bacon is good, but it pales in comparison.
Basically, but less interesting. I usually do it in a 9x13 so this is doubled...
- 12 eggs
- 16 oz heavy cream
- 2 lbs ground sausage
- ~2 cups cheddar cheese, pick a type--I like sharp.
- ~2 tsp salt
- ~1 tsp pepper
Preheat oven 350F. Brown sausage, spread in bottom of pan. Top with cheese, 2 cups is an estimate just make sure it's covered evenly. Mix eggs and cream, add salt and pepper. Pour mixture over sausage evenly. Bake about 45 minutes.

I like getting the 1-lb chubs, like the Jimmy Deans or equivalent, and I do a couple things. If it's for a normal breakfast, I'll slice it into patties and cook on the stove. I also like chunking it up and putting it into an egg bake, I can share the recipe if anyone wants. I like links, but it's not my favorite method. Italian sausage is good, but I don't prefer it for breakfast as its more of a lunch or dinner sort of thing... on a bun with peppers.
