Technically since sausage can contain cured meat you could grind bacon into a sausage making a forbidden breakfast meat.

What kind of sausage are we talking about here? Sausage patties, sausage links, italian sausage, chunks of sausage in a thick gravy, etc.?

I like getting the 1-lb chubs, like the Jimmy Deans or equivalent, and I do a couple things. If it's for a normal breakfast, I'll slice it into patties and cook on the stove. I also like chunking it up and putting it into an egg bake, I can share the recipe if anyone wants. I like links, but it's not my favorite method. Italian sausage is good, but I don't prefer it for breakfast as its more of a lunch or dinner sort of thing... on a bun with peppers.

sounds like that could be good, by egg bake do you mean like a quiche with sausage?

Basically, but less interesting. I usually do it in a 9x13 so this is doubled...

  • 12 eggs
  • 16 oz heavy cream
  • 2 lbs ground sausage
  • ~2 cups cheddar cheese, pick a type--I like sharp.
  • ~2 tsp salt
  • ~1 tsp pepper

Preheat oven 350F. Brown sausage, spread in bottom of pan. Top with cheese, 2 cups is an estimate just make sure it's covered evenly. Mix eggs and cream, add salt and pepper. Pour mixture over sausage evenly. Bake about 45 minutes.

At least most Bacon retains evidence of being being real (animal flesh) if that's what you're into. Sausage requires trust + who knows what other crap they put in there.
