I had leek-potato soup with crispy fried ham hocks in grits last week. It was wonderful.

Did you just throw like 2 leeks into the soup or were you some righteous "flavor seeker" that only takes the prime parts of the leeks without those glorious fibre-ridden leaves and roots?

I didn't cook that meal. I cook, but less often, now. There were some greens, but I think the soup had less than you would approve of ;-)

I use a lot of small chopped greens in the bacon dish.

You'd probably be horrified by the literal lbs of vegetables I'll pile into a stock pot for my veggie soups. Mmm now I gotta make that this week
