I'll eat sauer kraut if I can't avoid it. I feel sick for hours afterwards, though. Oh, and kimchee, <shudder>

Eh aged meat is pretty different than aged vegetables. Like truly good pepperoni is just hung in a cave near the ocean in Italy til it dries out, but truly good kraut is cabbage soaked in salt water in the open air. I wouldn't consider pepperoni fermented since that is basically a jerky

An occasional sweet gerkin is all I'll try. I remember pickled weirdness in jars in every little store I ever visited. I thought it was gross. Pickled food is in my kill it with fire category ;-)
