I looked it up and found that it is fermented. Not in a vat, though. It has some kind of lactic bactetia mixed in the filling and they cause the fermentation.

I'd never heard tell of such a thing. I listened to a couple old ladies talking about cured sausages while I was having my hair done before Christmas. You hear lots of weird conversations in a salon.
