Depends on how you cook them. If you leave the whole with a bit of firmness, definitely. You can cut them in half and roast them until they're soft but that loses a lot of the crisp flavor.

I wouldn't go that far. There's probably a reason that brussels sprouts sandwiches haven't caught on. I mean, beyond them rolling out.
