I've noticed it has a fine buttery taste and is very tender, but I'm not sure which one is better.
Really. I was thinking maybe it's less marbled or one of the less famous brands. I definitely notice a taste/texture difference. If I remember I'll ask them about it next time I go.

It can be crazy expensive, $45/lb. For some reason my butcher has some cuts for $12/lb (roasts) to $20.
