Waygu is literally, Japanese Beef.

There are several breeds that fall under that umbrella. The breeders have to adhere to a certain standard for feeding and rausing. Then the dressed beef needs to meet requirements fot fat content and I think for how easy it is to cut, and some others.

Waygu is wonderful. But... It's outrageously expensive. We offered it at our reception, but fewer people than you might think reserved it.

It can be crazy expensive, $45/lb. For some reason my butcher has some cuts for $12/lb (roasts) to $20.

Really. I was thinking maybe it's less marbled or one of the less famous brands. I definitely notice a taste/texture difference. If I remember I'll ask them about it next time I go.
