Frankly I think that 40 seconds is a bit too long to blanch spinach. I'd recommend going with 30 seconds.

If you're feeling a little lazy, a simpler version of the recipe is to just blanch the spinach, ice bath, squeeze the water out, then add lemon juice, a bit of salt and some soy sauce (if you like soy sauce). That makes a quick cold side dish instead of a hot one, but you'd be shocked how easy it is to go through a large bunch of spinach that way.
