Westerners have so odd stuff as well such as haggis. Anyone that has eaten a proper sausage has eaten intestinal lining.

At Korean bbq they just straight up serve intestine to cook. Having it as sausage lining is fine, just eating straight intestine is not terribly pleasant.

I had a nice intestine soup in Greece a while ago - we assumed the chopped intestine was pasta before our hosts corrected us.

Left over parts can be decent in soup. You won't see tendon and tripe on menus by themselves, but they are fine fillers for pho.
