I've been heading towards this goal for a while now but couldn't quite give a few things up. Mostly tomato sauce/ketchup, Sweet and Sour sauce, etc. I now make my own sauces and freeze any excess and use it again. It's not been easy either because I don't eat alone and other people aren't willing to go as far as me and sometimes you are just somewhere and have to eat something from a shit factory. No big deal to me because 99 percent of the time I'm where I want to be with it. Mushrooms have been a big discovery because they tend to hold the consistency of a sauce without any additives. For some reason I wouldn't touch these up until a few years ago but I nutted up and started eating them.

Congrats it's a big move. One of the reasons I moved abroad was so I could live a more natural life and I have never been happier or healthier. People from home comment how I actually appear to be on drugs these days cos I am so happy, which I think is a large part to do with the food I am eating.

This is the biggest change I noticed over the last few years doing this. I already was eating pretty well(or so I thought) so I was in shape after losing a massive amount of weight around ten years ago but my mood has improved so much.

People are liking my sauces too which I'm pretty proud of but they keep throwing salt on there.

Yeah, salt seems to be a big divider. TBH, I don't worry about it too much because (a) I live in a bloody hot country, so I need more than most; and (b) when you are only using it in food made from scratch you are avoiding the excesses they put in processed food, so will likely be using less than you have been.

I would always salt things at the beginning of cooking, not at the end - you will find it makes a much more noticeable difference.
