I always roast my brussels. Toss them in coconut oil and a mix of vinegars, not too much though otherwise your home smells like vinegar. 20 mins at 400 is perfect, add or remove 5 mins if you decrease or increase temp by 50 degrees for whatever else you are baking.

I don't use coconut oil much, tried it but it reminds me of the smell of suntan lotion from my childhood.

Get the solid virgin coconut oil. You just have to mix it with warm water to get it to liquid. It has next to no taste and a very high smoke point, like 500f. It won't set off your fire alarms ever.
