I always roast my brussels. Toss them in coconut oil and a mix of vinegars, not too much though otherwise your home smells like vinegar. 20 mins at 400 is perfect, add or remove 5 mins if you decrease or increase temp by 50 degrees for whatever else you are baking.
I don't use coconut oil much, tried it but it reminds me of the smell of suntan lotion from my childhood.
Brussels Sprouts goes with everything.

To be honest tho, the type of beef depends on which brassica it goes with best. Thin sliced beef is best when cooked with broccoli. Ground beef goes fantastically when you cook it with shredded cabbage and a little bit of your favorite variety of canned or fresh tomatoes. Steak goes best with sides of steamed or roasted broccoli, roasted brussels or a tart vinegar coleslaw. Large roasts....well that's root veggie's domain.
