Lockdown has taught me that most expiration dates are bullshit. I hard boiled some eggs that were almost 2 months "expired" last week and they were fine. I just simply did the "does the egg float in water" test first and only had to throw 1 egg out from floating.

The float test only measures the size of the air bubble inside the shell, which roughly indicates the age of the egg. It does not measure if the egg is still good. Usually eggs are still good to eat several weeks after they have collected enough air to float. The only truly reliable test is the smell test (given you're not anosmatic or a smoker or similarly disabled).

Evolution has prepared you for that test. You are the essence of millions of generations of survivors. For most of which raw eggs were a valuable protein source. You have the smell of bad eggs deeply ingrained into your genetic memory. If the content of the egg smells funny, you will know. Maybe you can stomach it, maybe not, your body, your choice. If the content smells bad, you will definitely know. And not even try to eat it. Just be prepared that a properly rotten egg smells like the seventh layer of hell. And your apartment with it. Your genetic memory, your entire system, will unanimously agree and dictate that you're not going to eat that.

Reminds me that I still have untouched eggs from the first weeks of the lockdown. Guess I better throw them away. I'm not an animal.
