I wonder what would happen if he tried coating an organic object with metal, like a carrot.

Well, I would imagine the heat in the chamber would do some pretty bad things to organic material.. But you would have a pretty metal salad.

I'm just wondering what changes in the decomposition rate would be and if the specific parts grafted to metal would even decompose normally

Actually you can use Plasma Enhanced Atomic Layer Depositon at low temperatures and cost metals. If you want to coat a metal oxide with thermal ALD you can do that at room temperature.
