Um, are you, , sure?

I use a combo of nothing and fillers.

Use verbal fillers in speech, and use body language to accent the pauses - such as a brow furrow to denote "I'm thinking", or a single finger pointed up to denote "wait one second", a tilt of the head to denote "confusion or being baffled", a few head bobs to denote "I'm deciding between 2 things" etc.

I tend to use the pause more when presenting, and use the filler when on phone conferences to "keep the floor" so to speak, as many conference call sets are half-duplex.

Of course I'm never sure how others percieve me, but I feel it myself.

It's not a problem with presentations which I had enough time to prepare and form the sentences in my head. But more if someone asks me a difficult question and I start answering before I know the whole sentence I'm going to say.

I usually just say, "That's a good question! I am going to have to think about that one for a second." and then move on, or write it down.

Sure, but that doesn't work every time, especially when someone calls to ask you a question.
