It's mainly a marketing gimmick these days. It started off hundreds of years ago and arguably led to better/safer beer back then since it restricted ingredients. But that isn't so relevant anymore, and you could argue it reduces their innovation. Of course they sure do love to advertise how their beer follows these strict rules that their competitors don't.
