Judging by the screen blur I would say NES. Most runners of the larger NES games play on NES.
There are a couple of different ways to capture NES footage but they're nowhere near as crisp as emulator recordings.

I tried to do SNES through a Avermedia USB capture card once, it did not turn out well at all. All kinds of blur, it was so hard to even decipher what was being drawn on the screen.

I've never directly captured any console, but I think it's getting a lot easier/cheaper to do. It has led to a few different speedrun communities to ban emulators for their game, mostly N64, but a few SNES games too.
