I doubt it will produce good results. The sediment will float about randomly. The without gravity the alcohol will not float to the top and will drown the things that produce it. I have no idea what the g-forces and atmospheric braking will do when it comes down.

Alcohol doesn’t separate from water. The two are miscible. It’s the concentration that kills the yeast. Which should be dead at this stage since it is no longer fermenting.
