Because most vegetarians do it to feel special rather than as an ethical or moral choice taken seriously. If you are a vegetarian and doing it right, you are paying more for your food overall and occasionally taking vitamin supplements to make absolutely sure that you're not lacking in B12, D, magnesium, and iron. You shouldn't have to take those all the time or even on a regular basis but you need to watch for it all the same.

For the haters, B12 only comes from a bottle or animal sources. No, fortifications in food counts as either a bottle or an animal source. It's as essential to us as taurine is to cats (which they can only get from meat or fortified cat food).
