Plus, this looks like it is super easy to make and I bet I could add a fermentation step to turn it into an alcoholic ginger beer.

You are propagating wild yeast for the carbonation (the ginger bug) so it is already somewhat alcoholic.

From what I have read about this type of carbonation the alcohol content would be negligible. Less than .02%
