I substitute onions with leeks sometimes when i'm making soup. They are a good aromatic to use in a recipe. They are somewhat similar to green onions, but have their own flavor that is different.

This was a legitimately helpful video. I've never knowingly eaten leek, though, and I'm not sure what to do with them or how they taste.
