Simplest way to root out Chinese apps is to install a firewall, like say NoRoot Firewall for the lazy. Every once in a while, reset it to block all network access without approval, then when an app requests network access, check out where the app is phoning home to. I found that one day out of nowhere, one of my apps started screaming home to china dozens of times per minute, even though I had used that app for a year or so without that behavior before.
