I think I'll cut tomorrow. I don't mind waiting a year to get better yield. They are just unwildly right now and would probably give better grapes in 2022 if the old vines are culled.

Cut now or don't cut. If you don't, you can tame the branches into itself as it grows. It will grow rapidly as fuck starting in spring.
If nothing else, pull those weeds out.
EDIT: Actually, from what I'm seeing, Feb/Mar is best time to prune. We usually did late fall, but not dead of winter. So... yeah, you have time I guess.
