Partly because scientists are more concerned with the sustained warming of CO2 rather than more medium term effects of methane.. but you really should elaborate on the statement, so I know what you mean.

Our breathing creates CO2 as well, but I think the main greenhouse impact of the dairy/agriculture industry is through methane and nitrous oxide. They produce a more intense warming, over a shorter atmospheric lifetime.
