I didn't add enough vinegar and salt last night and the cabbage didn't even start to collapse on itself overnight. 2lbs of cabbage should end up being maybe 2inches high if it pickled correctly, but mine was still 6 inches high in my container. I added more acidic apple cider vinegar, a bit more red wine vinegar and more salt than I wanted to, but it already tastes right 8 hours later after making the modifications. I'm gonna have to eat lot of it tonight because with that much apple cider vinegar and salt it will get sour af.

Also note you can see a little runoff vinegar on the bottom right. That's exactly what you want, maybe a tablespoon of runoff. Too little and you won't pickle, too much and it's inedible. Shake that baby every morning, noon and night and you got a lovely slaw.
