My grandkids LOVE roasted brussels sprouts. My daughter taught me how she does it for them, because I cook for her kids a lot.
She does it a little differently. The sprouts are cut the same way, and she uses olive oil, salt and pepper also. She puts them kind of piled in a casserole instead of spreading them out, and sprinkles a little parmesan cheese on them. Bakes for 20 minutes at 350, then toss and put them back in for another 20. No pine nuts or anything else.
