That's a tough call. Freshwater? I live in the Deep South, so I would go with the ironically-named crappie. I understand that as one goes northward, the walleye is the fish of choice. Then we get into trout and other salmonids, but those aren't real freshwater fish.

Saltwater? I like tuna, I like swordfish, even shark. Grouper is the best, though, with flounder running a close second.

Walleye for sure, but I can't get it on the west coast :( Out here, probably Alaskan Halibut

I don't have much experience with saltwater, so freshwater in order:

1) Walleye

2) Yellow Perch

3) Bass (Largemouth, probably even Smallmouth but I never caught many)

4) Hybrid Striped Bass - not sure how common these are elsewhere, but they're a sterile hybrid of Striped Bass and White Bass.

5) Channel Catfish

6) Northern Pike. These are tough because of the bones, but you can eliminate a lot of them.
