A Subway spokesperson told MarketWatch via email that DNA testing is an unreliable way to identify denatured proteins — or proteins whose characteristic properties change due to heat or acidity, such as the way Subway’s tuna was cooked before it was served on a sandwich, and then later tested by the Times.

I've worked at Subway. It comes in a can, precooked. That means that it comes in a standard form that can be measured.

So, no, no tuna involved.

What? It comes in a big vaccume sealed bag when I worked there ten years ago.

It depends on your supplier. The point is that it comes precooked from a standardized food processing source.

You can make the same sort of claim about other meats there. Aren't all the pork products like ham actually made of turkey?
