How do you make French toast casserole?

I cube and dry my bread out in the oven at 200F until it's near toasted, almost like croutons. The first time I ever made this I didn't dry the bread out enough and it turned out soggier than desired. I then pour in the mixture and let it sit overnight. My best results came from french bread. What you see in the picture was done with sourdough and I wouldn't recommend. I saw another recommendation for brioche but I wasn't able to find that.

The topping I mix with my hands then mix up with a fork to make it crumbly. I usually have more than enough to cover the top very, very well. It adds enough sweetness that I've found I didn't even need syrup.

Why would you even bother with white?

It's so hard to get yellow on the west coast that is good unless I make it myself
