It was largely the students, but the Dean was involved in the protests and reportedly told the dining hall to no longer serve food from the bakery. Part of the lawsuit was specifically against that Dean, so I'm guessing that's why the college was liable.

It's interesting that this falls on the college, I can see how they might have been surprised by their liability in this case.
The student organizers were those that did the damage, and I wonder what personal repercussions they faced.
