She was in her full right to stand up against this due to her moral. Trump was in his full right to dismiss her, she was "acting AG" anyway.

He tried that. He appointed Jeff Sessions (announced before he was inaugurated), but due to the Democrats' protests in skipping almost all hearings regarding appointments of his Cabinet, Trump was left with the interim Obama-appointed cabinet members. The outgoing President appoints temporary placeholders until the incoming administration gets their appointments approved by the senate. Sessions was finally approved today, just under 2 weeks after the inauguration.
As of Monday this week, marking 10 days after inauguration, Trump still had 16 cabinet appointees unconfirmed (due to Democrats refusing to show up to the hearings). At the 10 day mark for Obama, only 7 cabinet members were not approved. At the 10 day mark for Bush, only 2 cabinet members were not approved.
Like him or not, like his policies or not, he went forward with his campaign promise with an Obama appointed AG while his administration was being intentionally delayed by the opposition party.
Please, if there is an American God in heaven, give us more than 2 ruling parties in the US. I beg of thee.
The AG isn't suppressed to tell the DoJ to ignore written laws because they disagree with them. It was a valid reason to get rid of her.
