It's well insulated at least. If none of the timber has any rot just get some wet area flooring from your cheapest hardware store and nail it down then start on the walls. You might want to see a plumber after the floor though so he can mark out areas for pipes etc

This was actually taken back in April. At this point we have some base board down over the floor boards, but no linoleum or anything to protect it.

I actually was given some stick-on lino 'tiles' and they have protected my floor for well over 15 years eventually I'll rip them up and sand and put some sealer over the baltic pine floorboards underneath. Main thing with bathrooms is to get some materials that are rated for wet areas and make sure they are painted well and the room is ventilated. I've even got a piece of particleboard as a surround for the bath which is notorious for rotting if moisture gets to it but it's survived in there because I painted it top and bottom and keep the window open in there most times.

If you have some place to get some cement sheeting(not sure what it's called where you are) from that would be perfect to either paint over for a cheap option or to stick tile over as well.
