We used weed fabric with a 2-3" layer of wood chips last year and the damn nutsedge still came up. She must not have had to fight with nutsedge.

I dug up part of my 'grass' over the weekend. There are so many thick roots everywhere from weeds. Luckily I just cut down a lot of ornamental grass and i'm going to try and add newspaper and smother the grass and weeds

Newspaper didn't work for me when I tried it but I also probably didn't go heavy enough on my mulch. I'm a big proponent of a heavy mulch layer, especially pine straw, in ornamental plant beds due to similar reason she gives. When it breaks down it helps improve the soil and gives the acidic soil favoring plants their preferred soil pH without having to add anything else other than some fertilizer once a year.
