I had never had it until I went to a local butcher and I thought it tasted delicious. Expensive but nice for a special occasion :) I like the intense flavor and how the meat melts in your mouth. I usually eat it rare of blue rare.

I also get hamburger from them, they age the beef, then grind the hamburger ... so delicious.

I know how dirty pork is. that being said, my favorite cut of meat is prosciutto. second best being jamon iberico.

I've had aged beef but I wouldn't touch pork without cooking the fuck out of it and it being fresh off the pig.
